Vegan Blueberry Banana Bread – A Simple & Delicious Recipe
Do you love banana bread? Have you ever tried it topped with juicy blueberries? This vegan blueberry banana bread is my go-to when I have ripe bananas on hand and want something cozy, sweet, and just a little extra special. The blueberries on top get all jammy in the oven, making each bite even better. It's soft, moist, and easy to make with simple ingredients you probably already have.

Vegan Blueberry Banana Bread Recipe Ingredients:

3 extra ripe bananas (medium/large)
½ cup oil (or vegan butter)
½ cup brown sugar
½ cup applesauce
1 ½ cups all-purpose flour
1 tsp baking soda
½ tsp salt
1.25 cups frozen blueberries (for topping)

Instructions:
Preheat the oven to 350°F. Grease and flour a loaf pan (9.25" x 5.25" x 2.75"). In a mixing bowl, cream together the oil (or vegan butter) and brown sugar.
Mash the bananas with a fork until they resemble chunky applesauce, then add them to the sugar mixture along with the applesauce. Mix well.

In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this to the wet ingredients, mixing until just combined.
Pour the batter into the prepared loaf pan and spread it evenly.
Generously top the entire surface with frozen blueberries.

Bake for 1 hour or until a toothpick inserted in the center comes out clean. I usually have mine bake for about 1hour & 12 mins but check yours sooner to be sure!

Let the banana bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. This banana bread is soft, flavorful, and perfect for breakfast, a snack, or dessert. Enjoy it fresh or store it in the fridge for a few days—if it lasts that long! 😊
