Easy Avocado Pasta for One (Vegan, Egg-Free)
This is one of my favorite vegan go-to meals that I totally forgot about for like a decade — and now that I’ve rediscovered it, I’ve been making it nonstop.
It’s fast, creamy, satisfying, and perfect when you don’t feel like cooking. I used spiral pasta, but honestly, any shape works! Try rotini, shells, penne, bowties — whatever you’ve got.

Ingredients:
1 ripe avocado
Garlic salt (or garlic powder + salt), to taste
Black pepper, to taste
Squeeze of lemon juice or a little vinegar (apple cider or banana pepper brine works great)
Warm cooked pasta of choice

Optional add-ins:
Red pepper flakes or hot sauce
Nutritional yeast or vegan parmesan
Sautéed spinach, peppers, or onions
Kalamata olives or banana pepper rings
Chopped tomato or fresh spinach
A drizzle of olive brine or banana pepper brine for extra tang

Directions: Mash your avocado in a bowl with garlic salt, pepper, olive oil, and a splash of acid (lemon juice, vinegar, or brine).
Stir into warm cooked pasta until coated and creamy.
Add any extra toppings or veggies you like.
Serve and enjoy!

Make it a meal:
This dish is filling thanks to the healthy fats and fiber. If you want more protein, pair it with some Gardein chick’n strips. But honestly? It’s totally satisfying on its own.
