Vegan and Gluten-Free Chickpea Salad

  • 1 can (15 oz) Garbanzo beans
  • 1 tablespoon dried onion
  • 3/4 teaspoon garlic salt
  • 3/4 teaspoon dill
  • 1 dill pickle (finely chopped)
  • 1/4 cup vegan mayonnaise
  • 1/2 teaspoon ground black pepper
  • *Optional: tomatoes, lettuce, and gluten-free bread for sandwiches
  • *Optional: fresh onion and celery for added crunch

Instructions:


  • Mash the Garbanzo Beans:
  • In a large bowl, mash the garbanzo beans using a potato masher or the back of a fork. You can leave some chunks for texture.

  • Fold in the dried onion, garlic salt, dill, and ground black pepper into the mashed garbanzo beans. Mix thoroughly to evenly distribute the seasonings.

  • Incorporate Pickle and Vegan Mayonnaise:
