Cajun Black Beans and Rice

Ingredients:

  • 1 cup dried rice
  • 1 can black beans (15 oz can), drained
  • 4 tsp hot sauce (adjust to taste)
  • 1 cup vegetable broth

  • 1/2 package frozen pepper & onion stir fry mix (6 oz)
  • Lawry's Seasoned Salt to taste

Instructions:

  1. Cook the Rice: Start by cooking the rice according to the instructions on the package. Once cooked, set it aside.

  2. Heat the Veggies: In a large skillet, heat a small amount of vegetable oil over medium-high heat. Add the frozen pepper and onion stir-fry mix. Sauté the veggies until they become tender and slightly caramelized, usually for about 5-7 minutes.

  3. Prepare the Black Beans: While the veggies are cooking, drain the can of black beans and set them aside.

  4. Combine Ingredients: Once the veggies are ready, add the cooked rice to the skillet. Pour in the vegetable broth and add the drained black beans. Stir everything together.

  5. Season to Taste: Add the hot sauce to the mixture, starting with 4 teaspoons. You can adjust the amount based on your spice preference. Sprinkle Lawry's Seasoned Salt over the mixture to taste as well. Remember, the amount of seasoning can vary depending on personal preference, so feel free to adjust accordingly.

  6. Heat and Serve: Cook everything together for a few more minutes until the black beans are heated through, and the flavors are well combined. Keep stirring to ensure even distribution of the spices.
